What leavening agents can I use?
I must make a wedding cake that is gluten, alcohol, yeast, nuts and citrus free and completely vegan no milk, casein, eggs, etc. I use teff flour. I would like some suggestions on leavening agents and gum use. Please tell me the amount per x amount of flour. Does anyone know if baking soda is not gluten free and how to use? Any help will be welcome. I am an experienced gluten and allergen free Baker, much trouble is not a problem huge. Commercial baking powder is not an option because it is not gluten-free. I Xanathan and guar gum, soda and cream calculus. I'll make cup cakes I guess, good thing I have many friends with celiac and of course myself. Thank you any other suggestions. Nice to hear these good ideas.
Baking soda is gluten free. It should be pure sodium bicarbonate, which does not contain gluten. Since its ease of use availability and I would use 1 part baking soda to 20 parts flour. I know that sounds a lot, but you will have little effect with leavened flour teff and lack of yeast. I would suggest guar or xanthan gum (or a combination with xanthan gum offer more stability and more guar emulsification) Gum 1 part per 200 parts of flour. Gums are difficult … less is almost always better. You can also look at some maltodextrin as a bulking agent … 1 part Malto to 15 parts of flour. I did something similar for my main project at the college draft. It will certainly few batches to get the setup just right. I suggest making small batches of cookies for testing.
